My hubby loves peanut butter and chocolate!
To make him a happy pappy, I combined two of his favorites to make a pie.
Now, I surely can’t take all the credit for this delish pie. No, it goes to my favorite blogging chef of all time….The Pioneer Woman!
I would normally never use a new recipe on guests, without trying it out on my family first, but with her recipes, I never have to worry.
I have on more than one occasion used a recipe from her site on guests for the first time, and I have not been disappointed.
She has this recipe for chocolate pie that I have been making for several years now, and every time I make it, people just rave over it.
Since my hubby loves chocolate and peanut butter, I decided to take her recipe and “tweak” it to satisfy my hubby..:)
If you’d prefer to go without the peanut butter, then by all means stick to her recipe, and you’ll find it here. It is amazing all by itself!!!
I really like to make this pie on special holidays, like Easter, Christmas and of course hubby’s birthday.
Let’s get started….
Ingredients
- 4 ounces, weight semi-sweetened Baking Chocolate ( I use "Bakers" squares)
- 1 cup Salted Butter, Softened
- 1-½ cup Sugar
- 1 teaspoon Vanilla Extract
- 4 whole Eggs
- 1 package Baked Pie Shell
- 1/4 peanut butter, creamy
Instructions
- Melt the chocolate in a micro safe bowl for about 45 secs to a minute.
- Once the chocolate is melted and cooled, drizzled it into the butter/sugar mixture and continue mixing.
- Next, add the vanilla.
- Now here's where is becomes time consuming, but worth it.
- Add 1 egg to the mixer and beat on med-high speed for 5 minutes, scrape down.
- Add another egg to the mixer, beat for 5 minutes, scrape down
- Add another egg to the mixer, beat for 5 minutes, scrape down
- Add another egg to the mixer, beat for 5 minutes, scrape down.
- At this point you should have added 4 eggs over the period of 20 minutes.
- You will notice how the eggs did an emulsion thingy.
- Pour the chocolate mix into a baked pie shell.
- Now...take the peanut butter and micro for 30 secs till melted. Drizzle the melted peanut butter over the chocolate.
- Then using a butter knife swirl it into the chocolate till it is no longer visible.
- Pop it in the fridge and let it get nice and chilled. When you're ready to serve it, whip up some heavy whipping cream or use the can stuff.
